  • 3/4 cup moong daal
  • 1/2 cup boiled milk

  • 1/4 to 1/2 condensed milk

  • 1/2 to 3/4 cup sugar
  • 1/2 tea spoon cardamom
  • 2 to 3 almonds

Methods  :

    Tomato   1 no. (chopped)
    Garlic    5 fat cloves (chopped)

For Marination

    Chicken   500gm or 1.2 lb
    Red Chilli Powder    1 tsp
    Chicken Masala Powder   1 tsp
    Turmeric Powder   1/4 tsp
    Yogurt   1 tbsp
    Ginger Garlic paste    1 tsp

To Wet Grind

    Ginger       1/2" piece
    Small onion    6 or 7 no.s
    Garlic      3 cloves
    Green chillies    2
    Chillie powder    1/2 tbsp
    Coriander powder    1 tbsp

For Coconut Paste

    Coconut     2-3 tbsp
    Poppy seeds    1/4 tsp
    Fennel seeds    1/2 tsp

To Temper

    Oil    1-2 tbsp
    Fennel seeds   1/4 tsp
    Clove    3 no.
    Cinnamon   1/2"
    Cardamom    2 no.
    Bay leaf   1 small
    Mint leaves    1 tbsp copped
    Curry leaves    1 sprig

  • First wash chicken items completely then drain excess water and take it in an exceedingly bowl and add all the ingredients beneath the heading \"To Marinate\" and blend well and set it aside for half-hour.

The Delicious Paneer Malai

Malai Paneer, as name suggests, it’s a paneer malai prepared in a fresh milk cream based rich and spicy gravy where almond and cashew nut paste brings in rich texture while dried fenugreek leaves brings subtle but definite flavor.Cut paneer into one and a half inch by one inch by half inch sized rectangular pieces. Heat two tablespoons of oil in a pan. Sauté paneer pieces till lightly browned on all sides. Add salt. Dissolve one-fourth teaspoon of turmeric powder in a tablespoon of water and add to pan. Sauté till water dries up. Reserve one tablespoon scraped coconut and grind the remaining with one and a half cups of warm water. Squeeze and extract coconut milk.

Heat remaining oil in a pan. Add bay leaves, green cardamoms, cloves and cinnamon. Stir-fry briefly. Add grated onions and sauté for two to three minutes and then add ginger paste. You can sprinkle a little water if required. Blend red chilli powder and the remaining turmeric powder in a little water and add to onions. Stir-fry on medium heat for two to three minutes and add coconut milk. Add paneer, reserved scraped coconut and pure ghee. Add salt, cover and cook for five to seven minutes. Take a tender coconut. Remove contents. Fill empty coconut shell with this mixture. Cover with lid and seal it with atta dough. Preheat oven to 200º C - 220º C. Keep coconut shell in hot oven for fifteen to twenty minutes to cook on dum. Serve directly from the coconut shell.

  • In Pakki Biryani, where the meat is cooked with all the accompanying spices and then the rice is simmered with the resultant gravy redolent of mace.
